Easy BAKED TILAPIA

with Vegetables

This easy tilapia recipe takes just a few minutes to prepare, uses few ingredients, and is very healthy and flavorful.

For grilling, let your grill get hot and place the fish on aluminum foil until it's done.

Ingredients:
  •   1-1/4 pounds tilapia filets
  •   Yellow onion, thinly sliced
  •   1-1/2 stalks chopped celery
  •   1/3 cup chopped parsley
  •   2/3 of a 16 oz. can of diced tomatoes
  •   2/3 chopped green bell pepper
  •   1 tablespoon or more capers
  •   2 cloves minced garlic
  •   Fat-free cooking spray
Preheat oven to 425°F. Wash the tilapia, pat dry and cut into serving size pieces. Arrange fish in a 9 x 13 inch baking pan, then sprinkle with salt or a salt substitute and pepper.

Mix together the parsley, onion, celery, bell pepper, tomatoes, capers and garlic in small bowl. Coat the vegetables with cooking spray and pour over the fish. Bake the fish until it is slightly opaque in the center, usually about 20 minutes. Remove dish from the oven and let stand for 10 minutes before serving.

You can substitute HALIBUT for this tasty healthy entree!
